Nevertheless, figures about the amount of food we waste are still shocking and the problems remain huge. That’s why this edition focuses on the initiatives, entrepreneurs, chefs, tools and devices that make clear food wastage can become a thing of the past. For this edition, we spoke to chefs around the world and asked them for their views on our shifting diets, their responsibilities, and the growing importance of the why and how behind our food choices.
