The arrival of the cool crafters is causing a paradigm shift in the current system. Retailers are threatened, while bars, restaurants and hotels have new opportunities.
This is, however, a complex development. Transitions take time and work best when done gradually. You need to be able to ply your trade and take your chances, not risk it all in one go. More and more entrepreneurs are taking these chances are shifting ever so slowly towards on the spot production. Baking bread in front of the customer. Roasting fresh coffee in the back of the shop. When you get there, it’s a breakthrough.
