Our sensitive nose

Humans can discern around 10.000 distinct scents, which makes smell the most sensitive of our senses. Studies have shown that when it comes to our short term memories, we remember 1% of what we touch, 2% of what we hear, 5% of what we see, 15% of what we taste, and 35% of what we smell.

The music that’s playing in a restaurant influences the way a dish is perceived. Magnus Nilsson, chef of the Swedish restaurant Fäviken, is known for serving twenty courses in just a few hours, and the music goes a long way towards directing that experience.
