A new type of economy that embraces tradition and the rediscovery of the craft requires different systems of food.
New food suppliers make an effort to cut out the middle man and shorten the path to market. They’re cutting costs and redistributing margins. Farmers are seizing the initiative. After all, they are the specialists and they deserve to be compensated as such. These new systems of distribution stay closer to the source, generating new stories and connections.
